Ingredients

Potato and Marinade

  • 1 teaspoon dried dill (remaining portion)
  • 1 1/2 teaspoons extra virgin olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon cayenne pepper (increase for more heat)

Optional

  • Greek Yogurt Ranch Dip, for serving

Instructions

  1. Marinate Potatoes: Place the thinly sliced potatoes in a bowl and pour the pickle juice over them. Add 1 tablespoon of dried dill and stir to coat the slices evenly. Allow the potatoes to marinate for 1 hour, stirring occasionally to ensure all slices absorb the flavors.
  2. Season Potatoes: After marinating, drain the potatoes thoroughly and pat them dry with paper towels. Transfer the slices to a clean bowl, then toss them with the remaining 1 teaspoon dried dill, olive oil, kosher salt, garlic powder, and cayenne pepper until evenly coated.
  3. Air Fry: Arrange the seasoned potato slices in a single layer inside the air fryer basket. Cook in batches if necessary to avoid overcrowding. Air fry at 325°F (163°C) for 20 minutes, shaking or tossing the potatoes every 5 to 7 minutes to promote even crisping. Continue until the chips are golden brown and crispy all over.
  4. Serve: Serve the spicy dill pickle chips hot and crispy alongside Greek Yogurt Ranch Dip for an extra cooling contrast, if desired.
