These Apple Brownies are a moist and flavorful twist on traditional brownies, featuring juicy apple chunks and toasted pecans baked into a cinnamon-spiced buttery batter. Perfect as a comforting dessert or snack, they combine the sweetness of apples with the crunch of pecans for a delightful texture contrast.

Ingredients

Brownie Batter

  • 1/2 cup butter, salted, room temperature (112 g)
  • 1 cup sugar (200 g)
  • 1 egg
  • 1 cup all-purpose flour (133 g)
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamon

Mix-Ins

  • 1 cup chopped apple pieces, peeled and cored, about 1/2 inch chunks (100 g)
  • 1/2 cup toasted pecan pieces (53 g)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to ensure it is ready when your batter is mixed.
  2. Toast Pecans: In a small pan over medium heat, toast the pecan pieces until they become fragrant, about 3-5 minutes, stirring frequently to prevent burning. Remove from heat and set aside to cool.
  3. Prepare Apples: Peel, core, and chop the apples into small chunks approximately 1/2 inch in size, ensuring even size for consistent baking.
  4. Cream Butter and Sugar: In a mixing bowl, beat the room temperature butter and sugar together until light and fluffy, which will help create a tender texture in the brownies.
  5. Add Egg: Crack the egg into the butter-sugar mixture and mix thoroughly until combined and the batter is fluffy again.
  6. Incorporate Dry Ingredients: Sift together the flour, baking powder, salt, and cinnamon. Add these dry ingredients to the wet mixture and stir gently just until combined to avoid overmixing.
  7. Fold in Apples and Pecans: Add the chopped apples and cooled toasted pecans to the batter and mix well. The batter will be sticky and moist due to the apples’ natural juice.
  8. Transfer to Baking Dish: Butter an 8×8 inch baking dish or line it with parchment paper. Pour the batter into the dish and press it down evenly for uniform thickness.
  9. Bake: Place the dish in the preheated oven and bake for 30 to 45 minutes, depending on your oven. The brownies are ready when the crust is golden brown and a toothpick inserted in the center comes out mostly clean with a few moist crumbs.
  10. Cool and Serve: Remove the brownies from the oven and let them cool in the pan for about 15 minutes. Then cut into squares and serve. These apple brownies pair wonderfully with a scoop of ice cream for an extra special treat.

Notes

  • For a nut-free option, omit the pecans or substitute with sunflower seeds or other seeds.
  • Using tart apples like Granny Smith adds a nice tangy contrast to the sweetness.
  • Be careful not to overbake; moist apple pieces help keep the brownies soft.
  • Butter can be substituted with margarine for a dairy-free version, but texture and flavor may vary.
  • Store leftover brownies in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
