Using a candy thermometer, cook the mixture until it reaches 305 degrees Fahrenheit (hard crack stage). Once achieved, immediately remove from heat and stir in the vanilla extract for flavor.
  3. Coat Pretzels: Add the mini pretzels into the saucepan with the caramel mixture and stir thoroughly until every pretzel is evenly coated with caramel.
  4. Arrange on Cooling Rack: Using a spoon or spatula, transfer coated pretzels in small batches to the prepared cooling rack on the baking sheet. Spread them out so that pretzels do not overlap, allowing even drying and preventing sticking.
