Ingredients

Chicken

  • 2 small chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon poultry seasoning (or salt, pepper, garlic powder mix)

Garlic Bread

  • 1 Italian style loaf
  • 1 stick unsalted butter (melted)
  • 1 tablespoon minced garlic (or garlic paste)
  • 1 tablespoon chopped parsley
  • 1 teaspoon crushed red pepper flakes

Alfredo Sauce

  • ½ stick unsalted butter
  • 1 tablespoon minced garlic
  • ½ cup heavy cream
  • ¼ cup shredded Parmesan cheese
  • 1 tablespoon chopped parsley

Toppings

  • ½ cup shredded mozzarella cheese

Instructions

  1. Prepare and cook chicken: Cut the chicken breasts into ½ inch pieces. Transfer to a bowl and drizzle with 1 tablespoon olive oil. Season with 1 tablespoon poultry seasoning or a mix of salt, pepper, and garlic powder. Heat a pan over medium heat and cook the chicken pieces until golden and fully cooked.
  2. Prepare garlic butter for bread: Slice the Italian loaf lengthwise in half. In a small bowl, combine 1 stick melted butter, 1 tablespoon minced garlic, 1 tablespoon chopped parsley, and 1 teaspoon crushed red pepper flakes. Spread this mixture evenly over both halves of the bread.
  3. Toast the garlic bread: Place the prepared bread halves on a baking sheet and toast in a preheated 350°F (175°C) oven for 5-10 minutes, checking after 5 minutes to ensure the bread reaches your desired level of toasting.
  4. Make Alfredo sauce: Using the same pan from the chicken, heat over medium-low. Add ½ stick butter and let it melt. Stir in 1 tablespoon minced garlic and cook for 2-3 minutes until fragrant. Lower heat to low, then add ½ cup heavy cream, ¼ cup shredded Parmesan cheese, and 1 tablespoon chopped parsley. Simmer on low, stirring continuously until sauce thickens slightly (about 3-5 minutes). Remove from heat.
  5. Assemble the garlic bread: Spread half of the Alfredo sauce over the toasted bread halves. Top evenly with the cooked chicken pieces and sprinkle ½ cup shredded mozzarella cheese. Pour the remaining Alfredo sauce over the top.
  6. Bake to melt cheese: Return the assembled bread to the oven at 350°F (175°C) and bake for 5 minutes or until the mozzarella cheese is fully melted.
  7. Serve: Slice the bread into 2-3 inch pieces and serve warm, enjoying the creamy, garlicky, cheesy flavors.

Notes

  • You can substitute poultry seasoning with your favorite blend of herbs like thyme, rosemary, and sage if desired.
  • For a spicier kick, increase the crushed red pepper flakes or add a dash of hot sauce to the Alfredo sauce.
  • Use fresh garlic for more vibrancy, or garlic paste for convenience.
  • Leftover chicken Alfredo garlic bread can be reheated in the oven to maintain crispiness.
  • Feel free to add sautéed vegetables like mushrooms or spinach to the topping for extra flavor and nutrition.
