This Chipotle Sauce with Garlic and Sour Cream is a creamy, smoky, and slightly spicy condiment perfect for adding a flavorful kick to tacos, grilled meats, sandwiches, and more. Made with smoky chipotle peppers in adobo sauce combined with cooling sour cream, mayonnaise, and a hint of lime, this sauce offers a balanced heat and richness that’s easy to whip up in just 10 minutes.

Ingredients

Base Ingredients

  • 1 cup sour cream (or Greek yogurt for a healthier option)
  • ¼ cup mayonnaise

Spices and Flavorings

  • 2 whole chipotle peppers in adobo sauce, roughly chopped
  • 1 tablespoon adobo sauce (from the chipotle peppers can)
  • 2 cloves garlic, minced or roasted
  • 1 tablespoon fresh lime juice
  • ½ teaspoon smoked paprika
  • ½ teaspoon cumin
  • ½ teaspoon salt, or to taste
  • 1 tablespoon olive oil (optional, to adjust consistency)

Instructions

  1. Prep the garlic and chipotles: Roast the garlic in a dry skillet over medium heat for about 5 minutes until golden and soft if you prefer a milder garlic taste. Roughly chop the chipotle peppers to make blending easier.
  2. Blend the base: In a blender or food processor, combine sour cream, mayonnaise, chopped chipotle peppers, adobo sauce, garlic, lime juice, smoked paprika, cumin, and salt. Blend until smooth, usually 30 to 60 seconds depending on your appliance.
  3. Taste and adjust: Taste the sauce and add more chipotle peppers or adobo sauce for extra heat, more sour cream to mellow the spice, or adjust salt and lime juice to your preference.
  4. Check consistency: If the sauce is too thick, add a teaspoon of olive oil or water and blend briefly to reach your desired texture.
  5. Store and chill: Transfer the sauce to a glass jar or an airtight container and refrigerate for at least 30 minutes to allow the flavors to meld beautifully.

Notes

  • For a healthier version, substitute sour cream with Greek yogurt.
  • Roasting garlic mellows its flavor but you can use raw minced garlic for a punchier taste.
  • Adjust chipotle peppers according to your preferred heat level.
  • The sauce can be stored in the refrigerator for up to one week.
  • Use as a dip, spread, or drizzle over grilled meats, tacos, or roasted vegetables.
