Ingredients

Main Ingredients

  • Olive oil spray
  • 1 ½ lbs chicken breast (about 4 medium breasts)
  • 2 cups marinara sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion granules
  • 1 teaspoon Italian seasoning mix
  • ½ teaspoon paprika
  • ¼ teaspoon red chili flakes
  • 1 ½ cups chicken broth
  • 1 lb cheese tortellini
  • 1 cup mozzarella cheese, shredded
  • ½ cup heavy cream
  • 2 cups baby spinach
  • ⅓ cup Parmesan cheese, grated

Instructions

  1. Prepare the Slow Cooker: Spray the inside of the slow cooker with olive oil spray to prevent sticking.
  2. Arrange Chicken: Place the chicken breasts in a single layer inside the slow cooker, ensuring even cooking.
  3. Add Sauce and Spices: Pour the marinara sauce over the chicken, then sprinkle with garlic powder, onion granules, Italian seasoning mix, paprika, and red chili flakes for well-rounded flavor.
  4. Cook Chicken: Cover the slow cooker and set it to LOW heat. Cook for approximately 4 hours until the chicken is fully cooked and tender.
  5. Shred Chicken: Remove the chicken breasts, shred them using two forks, then return the shredded chicken to the slow cooker mixing with the sauce thoroughly.
  6. Add Tortellini and Cream: Stir in the cheese tortellini, shredded mozzarella, and heavy cream. Mix everything well to combine.
  7. Continue Cooking: Cook the mixture on LOW for another 30 minutes until the tortellini is cooked through and the sauce is creamy.
  8. Add Spinach: Stir in the baby spinach and cook for an additional 10 minutes until the spinach is wilted and incorporated.
  9. Finish and Serve: Sprinkle grated Parmesan cheese on top, taste the dish, and adjust seasoning as needed before serving.

Notes

  • You can substitute chicken breasts with thighs for a juicier dish.
  • For a spicier kick, increase the red chili flakes to ½ teaspoon.
  • If you prefer a thicker sauce, reduce the chicken broth to 1 cup.
  • Fresh herbs like basil or parsley can be added at the end for extra freshness.
  • Cooking times may vary depending on your slow cooker model, so check doneness accordingly.
