Ingredients

Shortbread:

  • 1 cup blanched almond flour
  • ¼ cup salted butter, softened

Caramel:

  • 5 tbsp salted butter
  • ¾ cup granulated allulose sweetener
  • ½ cup heavy cream

Chocolate Coating:

  • 1 ½ cups sugar-free chocolate chips, melted

Instructions

  1. Make the Shortbread Base: Preheat your oven to 325°F and line an 8×8-inch pan with parchment paper. In a mixing bowl, combine the almond flour and softened salted butter until a dough forms. Press this dough evenly into the bottom of the prepared pan. Bake it for about 10 minutes or until the edges are lightly golden. Allow the shortbread to cool completely before proceeding.
  2. Prepare the Keto Caramel: In a saucepan over low heat, melt the 5 tablespoons of salted butter. Stir in the granulated allulose sweetener and continue heating until the sweetener fully dissolves. Add the heavy cream and increase the heat to medium. Let the mixture simmer for 10 to 15 minutes, stirring occasionally until it thickens and turns a golden color. Expect some foaming, which is normal and will settle as it cools. Stir occasionally during cooling to help it thicken further.
  3. Layer the Caramel: Once the caramel has cooled to a warm temperature, pour it evenly over the cooled shortbread base. Place the pan in the refrigerator and chill for 45 minutes to 1 hour, or until the caramel layer is firm and set.
  4. Slice into Bars: Remove the set shortbread and caramel from the pan by lifting the parchment paper. Slice the large block in half, then cut each half into 10 bars, making a total of 20 bars.
  5. Dip in Chocolate: Melt the sugar-free chocolate chips until smooth. For easier dipping, you can add 1–2 teaspoons of melted butter or coconut oil if needed. Dip each Twix bar into the melted chocolate to coat thoroughly. Place the chocolate-coated bars on wax or parchment paper and refrigerate until the chocolate is fully set.

Notes

  • Sweeteners: Allulose is preferred for the caramel due to its melting qualities similar to sugar and its resistance to crystallization. Regular sugar can be used if sugar-free is not a requirement.
  • Salted vs. Unsalted Butter: Salted butter adds flavor and works well in both the shortbread and caramel. Unsalted butter can be used but add a pinch of salt to balance flavors.
  • Melting Chocolate: If the chocolate chips don’t melt smoothly, add 1 to 2 teaspoons of melted butter or coconut oil to ease dipping and create a smoother coating.
