  • 2 (10-oz) cans RO*TEL Original Diced Tomatoes and Green Chilis, undrained (see notes for a less spicy option)
  • 1 medium red bell pepper, diced
  • 1 1/2 servings Keto Taco Seasoning
  • Salt, pepper, and/or additional seasonings to taste

Instructions

  1. Brown the Beef: In a soup pot over medium heat, add the ground beef. Break up the beef as it cooks, cooking it until fully browned and cooked through. Drain any excess fat to keep the soup from being greasy.
  2. Add Remaining Ingredients: Add the beef broth, heavy whipping cream, undrained RO*TEL diced tomatoes and green chilis, diced red bell pepper, and Keto Taco Seasoning to the pot with the beef. Stir to combine all ingredients.
  3. Simmer the Soup: Bring the soup mixture to just under a boil, then reduce the heat and let it simmer for 10 minutes. This allows the flavors to meld and the soup to thicken slightly.
  4. Adjust Seasonings: After simmering, carefully taste the soup and adjust seasoning with salt, pepper, or any additional spices to your liking. If you prefer a thinner soup, add more beef broth at this stage.
  5. Serve: Ladle the soup into bowls and top with shredded cheese, sour cream, and crunchy pork rinds as desired. Serve immediately and enjoy your delicious keto-friendly taco soup.

Notes

  • For a milder soup, substitute RO*TEL Original Diced Tomatoes and Green Chilis with regular diced tomatoes or a mild canned tomato without chilis.
