Ingredients

Mushrooms and Oil

  • 16 even-sized open cup mushrooms, stalks cut level
  • 3 tbsp olive or vegetable oil

Garlic Butter Mixture

  • 3 tbsp unsalted butter, softened
  • 2 cloves garlic, chopped very finely
  • 2 tbsp fresh thyme, chopped
  • 1½ tbsp lemon juice
  • ½ tsp garlic powder
  • Salt and freshly ground black pepper to taste

Topping

  • 5 tbsp fresh breadcrumbs

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare it for baking the mushrooms later.
  2. Lightly Fry Mushrooms: Heat the oil in a pan over medium-high heat and fry the mushrooms cap-side down for 2-3 minutes to lightly sear and enhance flavor.
  3. Arrange Mushrooms: Place the mushrooms stalk-side up in a 9×13-inch rectangular ovenproof dish.
  4. Prepare Garlic Butter Mixture: In a small bowl, thoroughly mix the softened butter with finely chopped garlic, fresh thyme, lemon juice, garlic powder, salt, and freshly ground black pepper.
  5. Top Mushrooms: Spoon a small amount of the prepared garlic butter onto each mushroom, then gently press fresh breadcrumbs on top to create a crunchy topping.
  6. Bake: Bake the mushrooms in the preheated oven for 15 minutes, or until the breadcrumbs are golden and the mushrooms are cooked through.
  7. Serve or Store: Serve immediately while hot, or refrigerate to bake later.
