Sausage French Toast Roll-Ups are a delightful breakfast treat combining savory sausage with sweet, cinnamon-infused French toast. These roll-ups are easy to make, featuring cooked sausage links wrapped in flattened bread, dipped in an egg mixture, and pan-fried until golden and crispy. Served with maple syrup and optional powdered sugar, they offer a perfect balance of flavors and textures for a comforting morning meal.

Ingredients

Sausages

  • 12 breakfast sausage links (pre-cooked or raw)

Bread

  • 12 slices sandwich bread, crusts removed

Egg Mixture

  • 3 large eggs
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon

For Cooking

  • 2–3 tbsp butter for cooking

Serving

  • Maple syrup for serving
  • Optional: powdered sugar for dusting

Instructions

  1. Cook the sausages: If using raw sausages, cook according to package directions until fully cooked and no longer pink inside. Set them aside to cool slightly for easier handling.
  2. Prep the bread: Using a rolling pin, flatten each slice of bread to make it thin and pliable. Place one cooked sausage at one end of the flattened bread slice and roll up tightly around the sausage to form a roll-up.
  3. Make the egg mixture: In a shallow dish or bowl, whisk together the eggs, milk, vanilla extract, and ground cinnamon until well combined and smooth.
  4. Dip & cook: Heat a large skillet over medium heat and melt 1 tablespoon of butter. Dip each sausage roll-up into the egg mixture, ensuring all sides are coated evenly. Place them seam-side down in the skillet carefully to prevent unrolling.
  5. Fry until golden: Cook the roll-ups for 2 to 3 minutes per side, turning gently to brown all sides evenly. Add additional butter to the skillet as needed to prevent sticking and enhance browning.
  6. Serve: Once golden and cooked through, remove the roll-ups from the skillet. Optionally dust with powdered sugar and serve warm with maple syrup for dipping.

Notes

  • Use pre-cooked sausages to save time or cook raw sausages thoroughly before rolling.
  • Flattening the bread helps roll it around the sausage without tearing.
  • Adjust cinnamon and vanilla amounts for preferred sweetness and flavor.
  • Adding powdered sugar is optional but adds a nice touch of sweetness and presentation.
  • Serve immediately to enjoy the crispy exterior and warm sausage inside.
